This company philosophy favors eco-sustainable agriculture: washing, pressing and cold mechanical pressing of a low environmental impact process whose goal is the production of an organic certified extra virgin olive oil.
The olives, used in the production of “Cala Mona” Extra Virgin Olive Oil, come from about 400 young olive cultivars of the local tradition, the Salella variety.
The olives are harvested by hand, and only with the help of combs, in mid-September when they still keep their green color intact.
The early harvest, if on the one hand sacrifices the quantity in favor of the quality of the product, allows to prevent various types of diseases, treatable with great difficulty if you conduct serious organic farming.
The result is a product with a more marked aroma and taste and at the same time low acidity, all the important organoleptic properties are maintained, also rich in polyphenols which make it an oil of great value and quality.

Sensory analysis
Light green oil.
The fruity green olive of medium intensity has notes of artichoke and almond.
When tasted, it highlights medium and balanced bitter and spicy tones with an aftertaste of rosemary.
